Quinoa Salad

This recipe is not all my own.  Sister does a variation of the same salad. It is fantastic and refrigerates well.  High in fibre and protein. My whole family loves it, even Son. My picture doesn't do it justice.


Ingredients:
1 cup quinoa (make sure it's gluten free - I use Bob's Red Mill)
1/4 cup oil
1/8 - 1/4 cup lemon or lime juice
1/2 pint cherry or grape tomatoes - halved
1 small green pepper - diced
1 small red pepper - diced
1/2 cucumber - diced
1/2 tsp dried cilantro
1/4 tsp dried mint 
2 crushed garlic cloves
1/4 tsp sea salt

Cook quinoa according to package directions.
In large bowl mix all other ingredients.
Add quinoa and chill.

Super simple and fantastic.
