coleslaw recipe - variation #2

A little while back I posted about our cabbage harvest and how I needed a new recipe for cabbage as I was sure I was going to get bored of creamy coleslaw.  Well, I was poking around the fridge last week to see what needed to be used up, and found the last of our most recently harvested cabbage.  With little time, energy, or creativity left in me, I made another coleslaw. This time I skipped the mayo and substituted oil and vinegar.  It was a nice change to what had become the norm - creamy coleslaw.



No measurements were made to make this salad.  
Chopped cabbage.
Chopped carrots.
Chia seeds.
Olive Oil
Red Wine Vinegar.
