coconut almond honey raw vegan truffles

There's nothing like the anticipation of having company and figuring out what to serve to add a little life to one's menu and one's blog...this blog.

As you may know, I love super simple recipes, and this is one of those super simple recipes.

I changed the recipe up a bit, and here is how I made it:

Ingredients:
1 cup coconut flour
1/2 cup raw cashew or almond butter
6 Tbsp raw honey (or agave for a true vegan recipe)
1 Tbsp psyillium fiber
1 Tbsp hemp seeds
1-2 Tbsp carob powder for rolling

Instructions:
Measure all ingredients and place in food processor (with exception of the carob powder). 
Pulse until all ingredients have mixed well and are slightly sticky.  
Roll the dough into balls.
Roll the balls in the carob powder.
Refrigerate.
Enjoy.
